Our new Camp Managers

Manja Seifert and Jürgen Pietz have joined Severin Safari Camp three months ago as Camp Managers. They have settled in well, and they feel very much at home working in the middle of the wilderness. For them it is very important that our guests are comfortable and that they have a memorable and unforgettable stay at the Severin Safari Camp. Mrs. Seifert and Mr. Pietz are happy to answer your questions and to remain in contact with you. You may reach them via E-Mail: camp.manager@severin-kenya.com.

Our Camp Managers have a varied experience in both international and local hospitality industry, and have in the past worked at first-class hotels and restaurants in Germany and on the Guernsey-Kanal Island. They also worked at hotels and lodges in Kenya for more than four years, before they came to Severin Safari Camp.

Manja and Jürgen went on several vacations to Kenya,Tanzania and South Africa, and always had the dream to work there sometime in the future. They decided to let their dream come true and applied for a job in Africa. It worked. Today, our Camp Managers are happy and satisfied that they took this step and they do not regret it....

Book Tip: Tsavo Trilogy

The Tsavo Trilogy is an enthralling compilation of facts, stories, including the history and the geology of Kenya's famous Tsavo West National Park. Nana Grosse-Woodley, a qualified photographer by profession, is the author. She has lived with her husband, Daniel Woodley, in different parts of the Tsavo area for the past 12 years. The publisher Severin Schulte loves this country and wanted to share his dedication with his family, friends and everyone around. It was his idea to publish the Tsavo Trilogy in order to give interested readers a detailed insight into the park’s history, its inhabitants and to share with them many exciting stories.

Series: National Parks in Kenya

Kenya offers a number of National Parks which stretch over an area of about 50,000 sq km. Within the parks, there are many different habitats ranging from desert to mountain forests and water protection areas at the Indian Ocean The »Kenya Wildlife Service« (KWS) manages all parks. In this newsletter we will present you the Amboseli National Park.

Amboseli National Park is 260 kilometers from the capital city Nairobi, Amboseli National Park is the third most visited game area in Kenya after Maasai Mara National Reserve and Nakuru National Park. In 1883, Joseph Thompson was the first European to penetrate the feared Maasai region known as Empusel (meaning 'salty, dusty place' in Maa). He, too, was astonished by the fantastic array of wildlife and the contrast between the arid areas of the dry-lake bed to the oasis of the swamps, a contrast that persists even today.

Amboseli was set aside as the 'Southern Reserve' for the Maasai in 1906, but returned to local control as a Game Reserve in 1948 and gazetted as a National Park in 1974 in order to protect this unique ecosystem. It was declared a UNESCO Man and the Biosphere Reserve in 1991. The park earned $ 3.5 m (€ 2.9 m) in 2005. On September 29, 2005, Kenyan President Mwai Kibaki declared that control of the park should pass from the Kenya Wildlife Service to the Olkejuado County Council and the Maasai tribe.

The park is famous for being the best place in Africa to get close to free-range elephants. Other attractions of the park include opportunities to meet the Maasai people and spectacular views of Mount Kilimanjaro, the highest free-standing mountain in the world.

Culinary Africa

Today our cook from the Severin Sea Lodge presents you a typical African meal and reveals his special recipe so that you can cook it at home. This time we have chosen African Apricot Chicken on Skewers from our menu card.

Ingredients
3 lbs. boneless chicken breasts, cut into 4 inch chunks
2 cloves garlic, minced
Salt and pepper to taste
4 med. onions, finely chopped
2 tbsp. oil
1 1/2 tsp. coriander
1/2 tsp. cumin
1 1/2 tsp. hot curry powder
1 tbsp. brown sugar
1/2 c. fresh lemon juice
4 tbsp. apricot jam
2 tbsp. flour
30 dried apricot halves
1 onion, cut into 2 inch squares
2 bay leaves

Preparation
In a large bowl, combine chicken pieces, garlic, salt and pepper; set aside. In a medium frying pan, fry onions in oil until golden. Stir in coriander, cumin and curry powder. Stir to coat onions, and then add brown sugar, lemon juice and jam. Add 1/2 cup water. Bring to a boil, stirring constantly. Remove from heat. When cool, pour over chicken. Add bay leaves and refrigerate overnight.

The next day, thread meat with onions and apricots on skewers. Grill over charcoal or broil in oven (7 minutes on each side). While meat grills, remove bay leaves from marinade and transfer it to a heavy pot. Bring to a boil. Serve over rice.
